I have around a dozen track days under the belt. With the 2016 schedule I may add a dozen more in 2016!
Anyways, what is your approach to staying fit over the winter?
Me, I race dirt dikes (hare scrambles....woods events). It keeps me on 2 wheels ....

Treadmill, Airdyne and working on getting my new track bike ready for next season. Chassis done and engine going back in in a week or so, yay! Yes, it's in my kitchen, I have an understanding wife!

IF the lakes ever freeze up here in MI I'll be out on 2 wheels to get some seat time. Otherwise I'm playing hockey a couple nights a week and a few nights on the elliptical machine.

I strip all my bikes (3 this year, but mine go in to the basement) and do all the necessary maintenance. Valve clearance, fluid changes, everything. I try to get out for a run when conditions allow, but most of all I try really hard not to shovel calorie enriched crap down my throat all winter long.

I just continue to get more and more out of control. I get fatter, stiffer, etc.... as each winter passes. It is a downward spiral. :(

    This explains it......

Focus on core strength (Abs, lower back, upper legs and glutes) and flexibility. Anything that does that will keep you in good shape for next season.

I put my leather suit on a hanger and hang it up in front of my treadmill in order to keep training for marathons when the roads are icy. Otherwise, I ref hockey, play hockey, think about hockey, watch hockey, and teach my daughter how to play hockey. Once that's all over it's almost time to put that suit back on and see if it fits.
