imp:Soooo here is a favorite of mine: Can of Alaskan wild caught Salmon. ( just for Marc Perrone any fresh fish or seafood in place of the a fore mentioned). 2 egg whites. 3-4 cups Panko crumbs or Gluten free crumbs. Fresh parsley. 1/4 cup finely minced sweet onion. 1/4 cup finely minced yellow/orange/red bell pepper. (not green!) 1/4 cup finely minced celery. Creole seasoned salt. Black pepper. 2 table spoons MAYO. (not salad dressing!) 2 table spoons fresh lemon juice. Optional spices to your taste... Mix in a bowl. Make 1/2" patties about 4" in diameter. Fry in butter or your favorite oil (not margarine!). Any experienced trackday hero should have a small gas/propane stove and a cast iron skillet. Makes about 6 patties. Serve on your favorite toasted bun with your favorite coleslaw and mixed veggie salad.
